Yumm-O we love pizza almost as much as we love Em’s! For an easy summer dinner check this out:
Here is what you will need (give or take) to make 2 pizzas:
- 2 store-bought pizza-bases (or you can make your own)
- Tomato paste
- 6-8 mushrooms, sliced
- 1 medium red onion chopped
- 1 bunch of asparagus, cut into pieces
- Handful or 2 of walnuts – I used 70g packet
- Olives – whatever kind you like – I use about 8 per pizza
- 2 Tomatoes, sliced
- 6-8 cloves garlic, chopped
- 2 T. olive oil
- Cracked salt and pepper to taste
- Lot’s of fresh parsley
Instructions:
- Spread the bases with the tomato paste – don’t be chinsey
- Build your pizza with the mushrooms, onion, asparagus, walnuts and olives – just however you can fit them
- Layer the tomato over the top of the whole pizza
- Sprinkle with the chopped garlic (more is better)
- Drizzle with olive oil – 1 T. per pizza
- Cracked salt and pepper
Bake at about 200 degrees C for about 20 mins or just until golden. Serve with the fresh parsley on top. If more salt/pepper is needed then add it to taste.
Thinly sliced pumpkin goes really well on this pizza too but it comes a case of fitting everything on! If you want to, chuck on some grated cheese for a non-vegan option.
